Sweet Potato Hash


  • 2 medium red or orange sweet potatoes (sometimes incorrectly called yams), peeled and cubed
  • 1 small red onion, cubed
  • 1 red bell pepper, cubed
  • 1 lb spicy Italian sausage
  • 1/2 C goat cheese crumbles
  • 1 tsp fresh chopped dill
  • Salt & pepper to taste
  • 1 Tbsp olive oil (optional)
  • 1 pinch Cinnamon (optional)
  • 1 pinch Nutmeg (optional)


Prep by cutting the vegetables into 1/3″ cubes. Try to have all of your pieces the same size so they cook evenly. Cook sausage in a skillet over medium high heat until brown. Drain fat (or retain to use instead of olive oil) and place cooked sausage on a paper towel. Set aside for later. In another skillet (or the same one if using the sausage grease), heat olive oil over medium heat. Cook the sweet potatoes for about 15 minutes until almost tender. Season with a little bit of cinnamon and nutmeg, but don’t overdo it. Add the onion and pepper and cook another 5 minutes, until the potatoes are tender, but the vegetables still have a little crunch. Add the sausage and heat through. Add the chopped parsley then salt & pepper to taste. Serve and top with goat cheese.
