Fancy Mac

This recipe is called Fancy Mac because it is a much more refined version of this classic dish. The pasta is cooked in chicken stock for an extra kick of flavor and this is complemented by Gruyere cheese and fresh herbs. While you can certainly use canned or boxed chicken stock, I highly recommend homemade. Here’s my recipe. The mac is pretty easy, but do yourself a favor and chop your ingredients beforehand.

Ingredients:

  • 1 ΒΌ cups dry elbow macaroni
  • 6 cups chicken stock
  • 4 cloves garlic, minced
  • 2 Tbsp unsalted butter
  • 1 tsp fresh Thyme, chopped
  • 1 Tbsp fresh Parsley, chopped
  • 2/3 cup mild Gruyere cheese, grated
  • 1/2 cup Parmesan cheese, grated
  • 1/3 cup heavy cream
  • 1/3 cup milk
  • Salt & pepper to taste

Directions:

  1. Boil chicken stock over medium-high heat
  2. Add macaroni and cook for 10-15 minutes or until desired tenderness
  3. Meanwhile, in another pot, melt butter over low heat and add garlic
  4. Increase heat to medium-low
  5. Sweat garlic for about 1 minute (careful not to burn) then add milk and cream
  6. Simmer sauce for 5 minutes
  7. Remove sauce from heat and whisk in Gruyere
  8. Drain pasta reserving a little wetness from the chicken stock for flavor
  9. Add pasta to the cheese sauce and return to heat
  10. Add Thyme, Parsley, salt, and pepper
  11. Heat through and serve
